Recipe: Recently Made Dishes


{I substituted quinoa for the couscous and added red pepper flakes and extra chili powder.}



Quinoa with garbanzo beans, feta and chopped red pepper dressed with lemon juice, olive oil, white truffle oil and oregano.  Salt and pepper to taste.




{ I halved the recipe and it made 12 muffins.  I also omitted the shredded coconut.}

I'd love to hear what you thought of these recipes too... the pictures are great but there's no real opinion on if they were good, what you would do differently and if you recommend them!

I did a post a little while ago on low-fat oatmeal muffins (substituting apple sauce for most of the oil)..they turned out super yummy!! Will definitely be trying your banana crunch muffins!
